120 g Valerian salad
200 g shelled shrimp tails
50 g Pecorino Romano PDO cheese
Chive: as required
Extra virgin olive oil

Cook the shrimp in a pan with little oil, salt, white pepper and chopped chive.
Peel and clean the melon and make little balls with the proper tool.
Put the melon balls, the shrimps and the Valerian salad on the dish. Complete with flakes of Pecorino Romano PDO cheese. Season with oil, salt and pepper and serve.
